  5. Add the yogurt and mix well, then cook for another 5-10 minutes.

  6. Add the soaked basmati rice and 2 cups of water. Mix well and cover the terracotta cookware with a lid. Cook on low heat for 15-20 minutes, until the rice is cooked and the water has been absorbed.

  7. Once the biriyani is cooked, switch off the heat and let it rest for 10 minutes.

  8. Garnish with chopped fresh coriander leaves and mint leaves, and saffron (if using).
